Kopanisti cheese

Kopanisti is a spicy, soft, spreadable cheese with EU PDO (Protected Designation of Origin) status, made across the Cycladic islands—chiefly Mykonos, Tinos, Syros, Andros, and Naxos—since its registration in 1996. Its name comes from the Greek word for 'pounded,' referring to the way curds are hand-kneaded over the first 12-24 hours of fermentation before being wrapped in cloth under a weighting stone for about a week and aged in earthenware. The mold that develops during aging (from the Penicillium roqueforti family, the same genus behind Roquefort) gives it a sharp, peppery tang and strong aroma. It is typically served as a meze with ouzo, or as 'mostra'—a barley rusk topped with kopanisti, tomato, and olive oil.
